Provisions - A New Village Culinary Hub

Whistler locals were surprised to see acclaimed chef James Walt (the culinary director of Provisions‘s sister restaurant, Araxi) working the grill in the open kitchen on the breakfast shift when Provisions opened in December 2023. “I’d leave my house [in Squamish] at 4:40 a.m. every day,” Walt says with a grin. “I’d see people coming in, and quite soon, they became regulars; it was perfect!” Walt’s vision to create something “relaxed, informal and approachable, that offers both dine-in and takeaway” for the community has been a work in progress for some time, so to see this stylish spot — with a sleek combination of light-toned and black wood accented by stunning white and grey marble counters, with cozy blue leather couches, and shelves and coolers groaning with tempting choices — blossom into a hub of Whistler Village’s culinary scene has been worth all those early mornings.
“It was great seeing folks like construction workers come in for coffee (Provisions uses a velvety blend created for them by sister restaurant, Thierry [Café] in Vancouver) and a breakfast sandwich in the morning and then swing by on their way home for a rotisserie chicken,” Walt says. He has been waiting for summertime to bust out the new toy he’s most excited about — his soft-serve ice cream machine; Provisions will have a vegan-friendly version, too. “The raspberry swirl is so, SO good!” With a top-notch pastry program helmed by Rachel Nicholson, ex-pastry chef at Langdon Hall Country House Hotel & Spa in Cambridge, Ont., expect buttery cookies, a selection of pastries, seasonal cakes and desserts, and “the best croissants in town.”
But if you struggle with indecision, beware! Provisions has you covered from breakfast, with a full espresso bar and house-made goodies, to lunch, with made-to-order sandwiches, soups, salads, fancy Spanish ham and delicious cheeses, to dinner, with some tasty new sandwiches and a selection of wines, including some from B.C., and well… everything! Coming soon for your outing to a park, lake, or on the lawn at Whistler Olympic Plaza for a summer concert: picnic kits.
I tried so many delicious things here, and every bite and sip was a must-have — from the fully loaded avocado toast (available all day), add twists of smoked salmon, or a jammy soft-boiled egg (cooked for precisely seven minutes and 45 seconds!), or Matane shrimp, generously piled on garlic-rubbed, house-made sourdough. Then there’s that perfect breakfast sandwich on a house-made Japanese seeded milk bun with a fabulously crispy, panko-breaded poached egg, tomato, avocado, and smoked cheddar… and the juicy organic, free-range, Rossdown Farms slow-roasted rotisserie chicken, to the to-die-for almond croissant, and the Basque cheesecake from their adjoining sister restaurant, Bar Oso.
Look for them to be open later in the summer with new features, so after a day of adventure, you can drop in for a light dinner, grab a sandwich, a salad, or a mouthwatering half or whole chicken on its own, or as a combo with a side to go.
When everything is this good… it’s no wonder everyone’s a regular!
